Thats bc its fresh buffalo mozzarella. The other mozzarella that you normally see should be baked with the pizza till it melts :)

how many balls do you get with 1kg flour? and if i want to do twice as much, i just double the ingredients apart from the yeast right?

I started this recipe yesterday with regular flour. I plan on trying to find his kind of flour here in Canada depending how the pizza turns out today! Thank goodness for Cantinas! It was the perfect temp for the 24 rise!
@Vincenzo's Plate I cooked it on a pizza stone at 550F and it came out incredible! I wish I could post a photo here. The crust was so soft but still had that crunchy exterior. The bottom was cooked beautifully as well. Slightly golden and held its shape beautifully. Not doughy at all. Very light. I cooked the dough and sauce in the oven for 5 minutes pulled it out to add my toppings then threw it back in for another 5 to melt the cheese and cook down the toppings. It made 5 balls at 315grams. I threw 3 in the freezer for another time.

Dry yeast, just add the half of what you should add if it was fresh.

Most of the Neapolitan pizza dough recipes I've seen on the internet say that we need to use make some kind of a high hydration dough (more than 70 - 75%). Your dough is much more manageable with a lower hydration.
not all recipes are the same, but this one is amazing, one of the best you will ever find around!

the solution is to make it at home! 😁 Well take-away pizzas arrive cold and mushy because they're not eaten right away, while pizza should be eaten immediately after cooking!

Why put the cheese on after it comes out of the oven? Don't you want the cheese melted?
It was a Buffalo mozzarella, if you cook that kind of cheese it becomes soggy

Just ate this pizza. Taste very good. But this pizza dough is very difficult to make nice round shape. First trick is how to take dough balls from tray without damaging its shape. Second tricky thing is to stretch and flip. My dough was very very stretchy. Really difficult to make nice shape and not use rolling pin. Need a lot practice because this pizza is really delicious.
